One of the best things in fall is the variety of veggies and fruits it brings to us. with halloween coming up in a couple of weeks, I think we all are getting warm feelings about those pumpkins all around. my dad was the best as always and she brought me one of those orange beauties from his own garden. I was a bit anxious at first as I don’t like to waste food and well I had to come up with a few different ways to use it all.

So first what I had to do was to cut a big hole on the top of the pumpkin and start taking off the inside. I also separated seeds from the pulp in two different bowls.Once the biggest work was done- I separated some of the pumpkin to be left for freezing. You can later use this in soups or make puree for baking. There were some great ideas I found on pinterest here→, here→ and here→. I used ISTAD bags from IKEA if you wonder. I then took some of that fresh pumpkin and made the best soup ever! I got inspired by this Jamie’s recipe→ and tweaked it up a little by adding some potatoes and leek. You just have to roast some veggies in the oven and then blend everything with some cream (I also added some water). Use soya cream to get vegan option!You will be amazed how good this soup is. I was a bit sceptical about using those apples, but I was so wrong- apples add some great sweetness and mixed with chillies it creates a perfect combination!So once our pumpkin is getting frozen in the freezer and you tasted that awesome soup- let’s get back to work. Remember those seeds you took off? You should leave them for a day or two to dry and then- use them for roasting. You will end up with a great alternative snack!
