howdy, friends! hope you’re doing alright.

with all the work loud I’ve been missing on some good time in the kitchen. I had so many takeaways for the past few weeks, that I even lost a number. this month is tough, but it’s coming to an end, finally!

anyways, the other day I wanted to make something quick, yet special for dinner and I came up with a veggie version of fajitas and my friends were absolutely blown away (their words, not mine, haha). it will only take you a few minutes and serving this delicious meal has never been easier.

what you’ll need:

• 1 red pepper
• 1 courgette
• 2 tomatoes
• 1 onion
• 1 bag of vegetarian chicken style pieces
• 1 teaspoon smoked paprika
• 1 small pinch of ground cumin
• 2 limes
• olive oil
• freshly ground black pepper and salt.
• 6 small flour tortillas, or 3 large
• sour cream
• 1 avocado
• salsa sauce

how to prepare: 

• slice all your vegetables
• put your wok pan on high heat with some olive oil
• fry all the veggies before adding vegetarian chicken style pieces in the pan
• add seasoning, mix it all up and fry some more.
• blend avocado and mix it with sour cream. add some salt + pepper.
• you can also make your own salsa. recipe here

once everything in the pan is nicely fried- you’re good to go. take a tortilla wrap, add some veggies + chicken style pieces and top that with some avocado/sour cream mix and salsa sauce. serve with your favourite soda and enjoy!
