There couldn’t be enough of quick & tasty lunch ideas in this world. I’m always in look of some new recipes that I could use when I’m in the rush or make something to grab on the go. Every open market or event I visit lately seem to be serving Quesadillas with different stuffings. So of course I just had to make some myself!


What you’ll need:
• tortillas
• 1 can of tuna flakes in water
• 1/2 can of sweetcorns
• 1/2 jar of olives
• 1/2 large, red pepper
• some pickled jalapeños
• some cumin, smoked paprika, salt + pepper
• grated cheese, the more the merrier!
• some olive oil

How to prepare:
• chop olives, jalapeños, pepper. take a larger bowl, add veggies, sweetcorns & tuna flakes. add spices and mix everything well with a spatula.
• Preheat a spoon of olive oil. Lay a tortilla in the hot pan. Spoon on the veggies + tuna mixture and spread out, then sprinkle in the cheese, place a second tortilla on top and brush with a tablespoon or two of oil.
• Once the first side is crispy flip the quesadilla over. This can be a bit tricky. What I usually do is cover the entire pan with a cutting board or a plate, then flip the quesadilla out by inverting the pan. Once the other side is crispy too and all ingredients are warmed through you’re done!
• You can also make some sauce if you got a blender! I used some sour cream / 1/2 lime / some mints + parsley and a pinch of salt to create the perfect fresh dip!

Serve with some mexican beer & enjoy if you’re having a cozy movie night or pack some and carry to work!
