It’s time for a picnic season, friends! Despite the usual grilling you’re going to make, there is always a place for some delicious pre-made food on any day outside! I love all the foods wrapped in tortillas. Give me a spicy burrito or cheesy fajita and I will never say no. Of course, there is always a place for one more vegan alternative of a junk food in my life. I even paired this vegan fajitas recipe with some non-alcoholic wheat beer. Look at me, momma!
What you’ll need (serves 2-3): • some olive oil
• tortillas
• 1/2 red pepper
• 1 can of red kidney beans
• 6-8 cherry tomatoes
• 200g of tofu
• 1 small red onion
• some fresh parsley
• fajitas spices mix (you can just get a pack from the shop or make it yourself)
• salsa sauce (recipe here)
• 2 large avocados
How to prepare:
• Chop your veggies • Preheat some olive oil in a wok • Now this recipe is supposed to be as quick as possible, so just throw in all the veggies and sliced tofu at once and start frying. Mix constantly! • Pour some water to cool the things down a bit and continue frying until your peppers are soft, but still have firmness in them. • Take a tortilla wrap, add veggies and top that with some smashed avocado and salsa sauce. • You can place wrapped tortillas on a trey and place them in the oven for about 10-15 mins on a hight heat or grill.
