It wasn’t until this autumn when I first got to try Portobello veggie burger. My first attempt was over at gourmet burger place here in Vilnius, called Drama Burger. What I mostly dislike about eating veggie burgers out in restaurants is that most of the time chefs are trying to compensate meatless burger with a lot of sauces and spices. If you’re like me and enjoy vegetarian burger from time to time, you’ll understand, that by getting veggie choice, I’m not aiming for something as meaty as possible, I wanna enjoy every single piece of that burger without only tasting salt… Thus, even Drama Burger’s portobello’s were filled with yogurt which kind of ruined it for me. No surprise, I just had to try and get most of that mushroomy heaven myself, so after reading through some recipes online, I got to experience my own made Portobello Mushroom Burger.
What you’ll need (serves 4):
• 4 large portobello mushrooms
• 250ml your favourite dark beer
• some veggies (I used rucola, tomatoes & pickles)
• 1 avocado
• 2 spoons of sour cream
• 1 small onion
• chilli flakes, salt, pepper
• your choice of cheese (I used some parmesan)
• burger buns (use whole-wheat ones for healthier option)
How to prepare:
• clean up your mushrooms and place into a bowl, season with salt, pepper and some chilli flakes, sink it all in beer and leave for a couple of hours (or less) in a fridge.
• chop your veggies, cut buns in half, slice cheese.
• add some olive oil into the pan and fry your onion. once it’s nice and golden- add some brown sugar to get that caramel glaze going.
• peal your avocado, remove the pit, add it all into a bowl. add some chilli flakes, 2 spoons of sour cream, some salt+olive oil and use hand blender to prepare your sauce.
• preheat a pan with some olive oil. take your mushrooms out of the fridge and throw them into a pan once it’s hot. fry it for a bit and add some of that beer in there too.
• once your mushrooms are done- it’s time to make those burgers!
• this is how I made mine: take a bottom of that burger bun, add some avocado sauce, place whole mushroom, top it with cheese, then- just place the top of the burger bun and shot everything into an oven for a few minutes, to get your burgers nice and crispy and that cheese melted. once it’s done- just add some veggies under that top bun, followed with a spoon of caramelised mushrooms.
