my latest obsession is most definitely experimenting with the meals that take no longer than 15 mins to prepare. there comes the days when food is somewhere really low in a priority list, but you still know that you just got to eat. for time like this I most often just grab anything I can find in the fridge and see what could be done with it all. sometimes I give up and order takeaway, but sometimes magic happens and things work out just fine!
so the other day after having a rather busy morning all over town I got back home to realise that I didn’t think our lunch plans through. no problemo, I said! it’s time to make bruschettas!
Original brushetta most probably would be an antipasto consisting of grilled bread rubbed with garlic and topped with tomatoes, olive oil + salt and pepper, but you can also add almost anything you like to make this happen. these are two of my favourite variations:
what you’ll need:
• big loaf of sourdough or your favourite crusty bread.
for tomato and mozzarella bruschetta:
• pesto
• tomatoes
• mozzarella
• some basil to top
there are quite a few ways to do this, so you can just let your imagination do the work for you. I’m not really a kind of girl that likes to spend hours in the kitchen, so I just cut tomatoes + mozzarella cheese, spray pesto on bread and top it with the ingredients. for feta&salmon one, I just mash feta cheese with a fork and add some salmon pieces, I then squeeze some lemon juices in and add some dill. Of course, you have to grill the bruschettas in the preheated oven before serving. Leave them there until bread is all crispy and cheeses have melted properly. it shouldn’t take longer than 10mins.
