so we are happily settling down here in Vilnius and with things getting back to normal I’m finally getting some time for cooking at home. it’s good to be back!
with autumn kicking in big time, I really started to think about comfort food and well, soups are always my first choice when I feel a bit down and need something quick and tasty to keep me going. thus, for today I experimented with some recipes I found that conduct two of my most favourite ingredients- fish and coconut milk. just add a little garlic and you can make almost any meal taste like heaven if you combine those together. believe me, you will fall in love with this soup instantly!
what you’ll need (serves 3-4):
• 1 can of coconut milk
• 1 red pepper
• 1 onion
• 2 tomatoes
• some leek
• 2 fish fillets of your choice
• some coriander+red pepper powder+salt+pepper+olive oil
• 2 cloves of garlic
• some spring onions
• 1/2 lemon
how to prepare:
you should start with chopping your veggies nicely and preheating some olive oil in a large pan. leave garlic and spring onions away for now, we will add those later. start frying your veggies. firstly, add onion and leek, fry until golden and then add pepper+tomatoes.
while veggies are having fun in the pan- cut your fish in medium sized pieces and season them with coriander and red pepper powder. squeeze some lemon juice as well, but leave some to add at the very end.
once your veggies start getting soft- add fish pieces in the pan, season with some salt and pepper and fry for about 10mins.
then- pour a can of coconut milk and add some freshly chopped garlic+spring onions. close the lid and let it boil for another 10mins. Enjoy that lovely smell spreading into your kitchen- you’ll be done soon!
at the very end- squeeze the rest of lemon juices and mix everything very well. serve it in a nice big bowl and don’t forget to treat yourself to some hot chocolate afterwards. it’s autumn for heavens sake!
