Growing up I never felt like a morning person. I could have slept till noon and skip breakfast daily. However, once I started working/attending uni, my schedule had to change drastically. I learned to appreciate this peaceful time of the day. I learned to love waking up early and most importantly- I realised that breakfast is not only the most important, but also most photogenic meal of the day! Today I’d like to share 6 quick breakfast ideas I shared on my instagram & I hope you’ll get inspired!
Avocado & Marmite Toast– I discovered this combo while traveling in New Zealand. We used Vegemite over there, but I bet you can’t really feel the difference. Just get your ciabatta toasted- spread some Marmite and top with well ripened avocados. This breakfast is loaded with Vitamin B and will get you going straight away. You can also have an egg on the side if you know you gonna have a busy day!
Croissants– If you haven’t tried swapping your bread for croissants yet- you’re missing out big time! My favourite kind of croissant is stuffed with some mashed avocado, salmon & capers. These are definitely my most beloved weekend breakfast. Have fruit on the side and brew some nice coffee!
Poached eggs on toast– I kind of go through phases with eggs & at this moment I’m absolutely in love with poached eggs on my toast. To be honest I still keep failing from time to time, but once I get to make that perfect egg- I couldn’t be prouder about myself. Just get your toast ready- blend 1 small tomatoe with some olive oil, salt & pepper and spread in on bread, top it with some spinach or rockets and finish with a perfectly poached egg. You’ll love this!
Salmon & Avocado Toast– This is probably most popular breakfast in my home. I alway, always try to have avocados and smoked salmon in my fridge and this combo never lets me down. Smoked salmon is very salty itself, so you don’t have to add any spices or extra salt!
Spinach & Feta Breakfast Muffins– these are amazing if you find yourself always running late in the mornings. You can make them the night before and just grab a few on the go. Don’t forget to stop by your favourite coffee place and grab a hot brew to go! Find recipe here.
Green Smoothies– you can find me having green smoothies for breakfast probably 90% of the time. I always have some fresh or frozen spinach in my fridge. This particular one was made out of handful of spinach + kiwi + avocado + cucumber + crushed ice. It’s so good for you and is super refreshing!
